Shredded Enchilada Chicken
Happy Friyay Everyone! And because it is Friday, I'm making a really simple, yet delicious meal for dinner! Shredded Enchilada Chicken! This meal has only a few ingredients, and is so versatile! You can serve this Shredded Enchilada Chicken over rice, beans, pasta, or inside tortillas. I know, so awesome right?! Lets get started!
Shredded Enchilada Chicken
Ingredients:
6 chicken breasts
28 ounce can Green Chili Enchilada Sauce
10 ounces Queso Fresco Cheese
4 ounce can of green chilies
1 bunch of fresh Cilantro
2 Limes
That is all you need to make this amazing Shredded Enchilada Chicken!
If you are making this Shredded Enchilada Chicken in your crockpot, add the whole chicken breasts, the green chili enchilada sauce, the green chilis, and the juice of one lime into the pot. Every crockpot is different, but I cook mine on high for four to six hours, until the chicken is tender, and can be shredded with forks.
If you are making this Shredded Enchilada Chicken in your Pressure Cooker, add the whole chicken breasts, the green chili enchilada sauce, green chilis, and the juice of one lime into your pressure cooker. Lock the lid on and cook for twenty minutes, depending on your pressure cooker. Once the pressure cooker is done, release the pressure on your pressure cooker.
Once your chicken is done cooking, shred the chicken using two forks.
