Guacamole Marinated Carnitas
Summer time is here, which also means, grilling season is too. It’s time to fire up the grill, because I’ve got some new recipes to create, and also some oldies. I can’t wait to share them with you!
During the summer, we use our grill several times a week. Even if it’s just throwing some hot dogs on. By the way, I’ve got some yummy ways of taking them from ordinary to delish!
First things first though, these carnitas. I have a secret ingredient for these. It’s this green salsa I found at the store, and I LOVE it!! It’s not just Verde salsa, though. It’s guacamole salsa. I could drink this stuff, it’s that wonderful. I prefer to buy the mild, that way my little ones won’t complain about the heat.
Here is my version of carnitas. However authentic they are, or not, they are tasty and flavorful!
Ingredients
Carnitas meat:
1/2 Jar Herdez Guacamole Salsa
2- 3 T Grill Mates Brazilian Steakhouse Seasoning
2 T Chipotle Seasoning
Carnita Meat
2 Red Bell Peppers
1 Large Onion
1/2 C Herdez Guacamole Salsa
1 T Brazilian Steakhouse Seasoning
Drizzle with Olive Oil
*Tortillas, sour cream, shredded cheese, lettuce, guacamole
Directions for the carnitas meat-
Place the carnitas meat, guacamole salsa and seasonings into a container. This should marinate for at least an hour. Though you can definitely let it sit over night in the fridge. Once the meat has marinated, it's ready for grilling.
We grilled these for our little family, so some of the carnitas meat, was cooked longer for our kids. While our carnitas meat, was medium done.
Turn the grill up to high heat, and let it heat up, with the lid closed. Then place the meat on the grill, and cook with the lid open for about 8-10 minutes. Flip, half way through.
After grilling, let the meat sit for a couple of minutes before slicing.
Don't forget about the bell peppers and onions. I like to put these in just before my husband puts the meat on to grill.
Bell pepper & onion directions-
Heat your oven to 375 degrees.
After preparing your bell peppers and onions, slice your veggies into rings. Place them into a big mixing bowl, and add in the salsa, seasonings, and olive oil. Give it all a toss.
Place your veggies, onto a large baking sheet. Cook in your oven for 15-18 minutes. That’s it!
We layered our meat onto a tortilla with the veggies, cheese, fresh guacamole, lettuce and sour cream. All of the flavors blended so well together, and was a big hit. This kind of meal is my favorite, out on the back porch, along with a tall glass of lemonade! Happy summer time weather and eating! What are you most excited, to grill this summer?
