Sriracha Taco Tater Tot Casserole

This dish is one of my husbands comfort foods! It’s definitely a dish that falls under a guys main menu option. Maybe, I should say, falls into his stomach actually! Luckily, my kids enjoy it as well. It has tater tots, colorful corn, and tomatoes. Plus a sprinkling of cheese. It all draws the eye, and makes it a little more appealing.

Let’s not forget another important thing! This dish is easy to make, and quick to clean up after. That’s a win-win situation. Especially on a busy weekday night. My husband also loves for me to whip this up on game nights as well. Check it out lady’s and gents. Your going to enjoy this belly warming recipe!

1 pound ground beef

1 packet of Taco seasoning

1 can corn with juice

1 can Chili seasoned pinto beans

1 jar of green salsa verde

1 cup sour cream

1/3 cup Sriracha, you can use 1/4 cup Sriracha if that’s too much spice!

1 bag of tater tots, about 20oz

1 cup shredded cheddar cheese

Sour cream, fresh diced tomatoes, fresh cilantro, and fresh avocado for garnish.

In a skillet, cook the hamburger, and add in the taco seasoning packet, and salt and pepper to taste.

Then add in the can of corn, beans, and jar of green salsa verde. Next stir in the sour cream, and Sriracha!

Once it’s all incorporated, pour the mixture into a greased casserole dish, and then layer the tater tots on top, and sprinkle with cheese! Bake at 350 degrees, for 30-40 minuets.

I like to serve this dish with fresh tomatoes, cilantro, avocado, and extra sour cream! I hope y’all enjoy this Sriracha Taco Tater Tot Casserole!
