Peanut Chicken Slaw

Happy Friday Everyone! The weather is wonderful, and there is no school today! So we are having a family picnic! This Peanut Chicken Slaw is perfect for the menu! My family loves it because it is different than our usual salad, or coleslaw. The flavors are amazing, and the added chicken makes it a meal on its own! I can't wait for y'all to try it out!

You will need,

Ingredients:

1 can of Chicken, drained

1 bag of coleslaw mix

1 bunch of cilantro chopped

1 jalapeño thinly sliced optional

1 green onion thinly sliced

roasted peanuts garnish

Crispy chowmein garnish

Sauce:

1/4 cup creamy peanut butter

1/4 cup Apple cider vinegar

1/4 cup water

1/4 cup sugar

1 tablespoon Sriracha

2 tablespoons soy sauce

First, Lets make the sauce! Into your food processor add the peanut butter, apple cider vinegar, water, sugar, Sriracha, and soy source. Pulse until its well combined.

In a bowl mix together the coleslaw mix, chicken, cilantro, jalapeño, and green onion.

Now, add the sauce into the mixing bowl, a little at a time. That way you can make your slaw as saucy as you like, You may like your slaw less saucy than I do! Stir until its all incorporated.

Now serve this beautiful Peanut Chicken Slaw with peanuts, and crispy chowmein noodles sprinkled over the top! This is perfect for your next picnic, or family get-together. Believe me, it tastes as good as it looks! Enjoy Friends!
