Mini Cheesecakes
It was my brother’s birthday this week! Which usually means we eat birthday cake, my favorite! But Clayton doesn’t like cake, so weird! So I made him these mini cheesecakes instead! They worked out perfectly for his special day! These mini cheesecakes are delicious, and easy to make!
Here’s what you need,
Cheesecake ingredients:
2 packages, or 16oz of softened cream cheese
3 eggs
2/3 cup white Sugar
1 teaspoon vanilla
1 box of Nilla Wafers
Topping ingredients:
1 cup of heavy whipping cream
1 cup of powdered sugar
1 teaspoon vanilla
12 strawberries, washed, and halved lengthwise
Place cupcake liners in your cupcake pan; then add a Nilla Wafer into the bottom of each one.
In your mixer, cream together the cream cheese, white sugar, eggs and vanilla.
Pour the cheesecake batter into your cupcake pan, and bake at 350 degrees for 15-20 minuets!
While the cheesecakes bake, mix together the whipped cream, and powdered sugar, until stiff peaks form!
Let the cheesecakes cool completely! Then top each one with a dollop of whipped cream, and a bright strawberry! Any type of fruit pie filling is also an amazing topping for these mini cheesecakes! We would love to know, What is your favorite topping for these cheesecakes?!
