Summer Berry Bars


One of the best holidays in my opinion is, the Fourth of July! I always get excited for it. Why wouldn’t you? Celebrating our nations hard earned freedoms. We always celebrate with patriotic decorations, flags, lots of yummy food, and great people! I can’t wait!! Our family is usually pretty busy this day. We attend a parade in the morning, and have a cook out. We like to play outdoor games too, and set off lots of fireworks! You’ve got to end it all with a great bang!

If your needing a dessert to help y’all celebrate this special occasion, I’ve got just the thing! My Berry bars are delicious and great for picnics, and barbecues! The other thing about these berry bars, they have some zing to them! I add lemon into the bars, and the flavor is amplified just a little more. Here is what you’ll need...

Ingredients

1/2 C Butter

1 C Granulated Sugar

2 T Lemon Juice

1 egg

1 3/4 C Flour + 2 T Flour

1/2 tsp. Salt

1/2 tsp. Baking Soda

1 Can of Cherry Pie Filling

1 Can of Blue Berry Pie filling

First step is to mix together the butter, sugar, egg and lemon juice.

Now add in the flour, salt and baking soda. Once this is all mixed, pull out 3/4 C of filling of dough and add an extra 2 tablespoons of flour to it. Press the remaining dough into a baking dish.

This is going to be the base for your bars, so you are going to want to make sure it is baked well. Cook at 350 degrees for 15 -20 minuets. If it’s not cooked enough, your berry pie filling can start seeping through it. Which will make your dessert soggy.

After it’s baked, scoop your pie filling onto the cookie base. I placed a little of each filling in a row along the dish, creating stripes of red, and blue.

Now use the remaining dough, and break it into pieces. Then sprinkle it over the top. Bake for another 15-20 minutes.

These bars are wonderful all on their own! Though, my favorite way to eat these Summer Berry Bars, is with a big scoop of vanilla ice cream.
