Harvest Sausage Stew


October is here and living up north it is truly feeling like Fall! That also means yummy stew on a chilly Fall day! I have a lot of butternut squash in my garden, so I decided to add it to my stew. Oh my goodness, it was delicious! This stew is so flavorful, and I just love the Fall colors! I will defiantly be making it again.

Here's what you need,

Ingredients:

1 tablespoon of olive oil, to fry your sausage

1 package beef smoked sausage, cut into bite-size slices

2 cups of yellow potatoes

2 cups of butternut squash

2 cups of zucchini

3 cups of chicken stock

1/2 teaspoon of ground pepper

1 teaspoon of salt

1 teaspoon of minced garlic

1 package brown gravy mix

1 tablespoon flat-leaf parsley

In a large pot over medium heat, add the olive oil and then your sliced smoked sausage. Once the sausage is browned, add your potatoes, butternut squash and 3 cups of chicken stock. Then you'll add your seasonings, garlic, and your package of brown gravy mix. Stir and allow the mixture to come to a boil. Once it comes to a boil, put a lid on it, and turn the temperature to low. Cook for about 25 minutes, or until the potatoes have softened. Then add the zucchini, continue to cook until the zucchini is softened, but not mushy! Don't forget to stir the stew when cooking to prevent the bottom from burning. This makes a wonderfully easy dinner!

The best thing about this stew is you can add whatever vegetables your family loves, or whatever you have on hand. This Harvest Sausage stew is the ultimate comfort food! The next day I took the little bowl that was left over, to work and I'll tell you it was even better the next day! Hope you enjoy!
